Simple Pita Pizza

Pita pizzas are hands down my favorite go to quick meal when I don’t want to spend an hour cooking and cleaning. These are the perfect way to end the week when you have extra veggies in your fridge that you don’t want to waste. I want this to be customized to your preference because everyone has their own pizza preferences.

Go crazy with your toppings or go simple. It’s all up to you. I personally prefer some spinach, peppers, and jalapeños for a little kick. I hope you enjoy this super easy, 10 minute meal. If you decide to make this tweet me or tag me on instagram!

Simple Pita Pizza

Ingredients
  

  • 1 Small Pita Bread Slice
  • 1 Tbsp Tomato Paste
  • Cup Non Dairy Cheese Myokos melts well
  • Banana Peppers to taste
  • ¼ Bell Pepper chopped
  • Jalapeños to taste
  • Tsp Garlic Powder
  • Tsp Dried Basil
  • Cup Spinach chopped
  • 4-5 Cherry Tomatoes sliced in half
  • Salt & Pepper to taste

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with Parchment paper.
  • Spread tomato paste on pita bread and top with all ingredients.
  • Bake for 8-10 minutes.
  • Enjoy!

    I make this all the time with pocketless pita (yours looks better).
    It is good with veggie meatballs (or sausage) and you can fold it over for a “meatball” sub!
    I use Gardein or Trader Joe’s but it would be awesome if you came up with a veggie meatball recipe!
